Ingredients

  • 400 g puff pastry (frozen)
  • 1 egg yolk
  • 15 g Emmental cheese (fresh grated)
  • 1 tsp Caraway seeds
  • Salt
  • 1 tsp peppercorns

Instructions

    Place thawed puff pastry on a lightly floured work surface and roll it out slightly. Whisk the egg yolk with 2 tbsp water and brush the dough with this mixture.

    Crush the caraway seeds and peppercorns in a mortar.

    Sprinkle the dough with cheese, pepper‑caraway mix and a pinch of salt. Fold once, lightly roll again and brush the surface with more egg yolk. Cut into strips about 1.5 cm wide, spiral‑roll them, and place on a baking sheet lined with parchment paper. Bake in a preheated oven at 220°C for about 15–20 minutes until golden brown.
