Ingredients

  • butter (for the ramekins)
  • bread crumbs (for the ramekins)
  • 100 g Spinach
  • Salt
  • 4 eggs
  • 80 g Butter
  • 1 pinch nutmeg (freshly grated)
  • 150 g freshly grated cheese (e.g., Emmental, Greyerzer)
  • 4 tbsp whipping cream
  • 2 tbsp crème fraîche
  • 2 tbsp flour
  • Nutmeg (freshly grated)

Instructions

    Grease fireproof ramekins with butter and dust them with bread crumbs. Preheat the oven to 200°C (400°F) with both fan and top heating.

    Wash, trim, and briefly blanch the spinach in salted water. Shock it, squeeze out excess liquid, and finely chop. Separate the eggs. Whisk the butter with the yolks and nutmeg until frothy. Fold in the spinach and then alternately mix in the grated cheese, whipping cream, and crème fraîche. Finally fold in the stiffly beaten egg whites and flour. Season with a pinch of salt and nutmeg.

    Fill the mixture into the ramekins and bake in the oven for 15-20 minutes until golden brown. Serve immediately.
