Cheese Soufflé

Ingredients
- soft butter (for the ramekins)
- sugar (for the ramekins)
- 2 Eggs
- 2 tbsp lavender honey
- 100 g goat cream cheese
- 0.5 tsp orange zest (unprocessed)
- 2 tbsp vanilla sugar
- 1 tbsp flour
- powdered sugar (for dusting)
- lavender buds (for garnish)
Instructions

Preheat oven to 200°C (400°F) with fan and top heat. Grease four small soufflé ramekins with butter and sprinkle with sugar.

Separate the eggs. Beat yolks with honey until pale‑creamy. Stir in drained cream cheese and orange zest. Whisk egg whites until stiff peaks form, gradually adding vanilla sugar. Fold one third of the meringue into the yolk mixture, sift flour over it, and fold together. Gently fold in remaining meringue.

Fill ramekins three‑quarters full with batter. Carefully remove any excess butter and sugar from the top edge.

Bake in preheated oven for 10–15 minutes until puffed. Dust with powdered sugar, garnish with lavender buds, and serve immediately.
