Ingredients
- 2 red bell peppers
- 1 Garlic clove
- 300 ml dry white wine (e.g., Riesling)
- 400 g buffalo mozzarella
- 200 g Taleggio cheese
- 1 tsp starch
- Salt
- Pepper (freshly ground)
- a splash of lemon juice
- 20 cheese sticks

Wash the bell peppers, halve them, remove seeds and white membranes, and finely dice. Peel and halve the garlic. Rub a fondue pot with it, pour in the wine (leaving 3 tbsp), and bring to a boil. Meanwhile, grate or tear the cheeses and add them to the wine. Stir constantly over low heat until the cheese melts.

Bring the thickened mixture to a simmer and thicken with starch that has been stirred into the remaining wine, then add the diced peppers. Season the fondue with salt, pepper, and a splash of lemon juice, and place it on a hot plate. Serve with cheese sticks for dipping.
