Cheese-Chocolate Cake
Quick dessert: Cheese‑Chocolate Cake is perfect for gifting, bringing, and snacking.
Ingredients
- 400 g flour
- 2 egg yolks
- 250 g butter
- 5 tbsp heavy cream
- 1 pinch salt
- 100 g sugar
- 4 tbsp dark cocoa powder
- 1 packet baking powder
- 5 eggs
- 750 g low‑fat quark
- 100 g Sour cream
- 150 g 0.3% fat yogurt
- 1 untreated lemon (zest)
- 2 packets vanilla pudding mix (for 500 ml liquid)
- 75 g sugar (to taste)
- 1 egg yolk
- 4 tbsp heavy cream

Put all dough ingredients in a bowl and knead with the hand mixer’s dough hooks, adding a bit more by hand if needed. Wrap the dough in cling film and chill for at least 30 minutes.

Preheat the oven to 200 °C (top/bottom heat).

For the filling separate the eggs; whisk the yolks with quark, sour cream, yogurt, lemon zest, and pudding mix until smooth. Beat the egg whites with sugar into a very stiff foam and fold into the quark mixture.

Scoop two‑thirds of the dough onto a baking sheet lined with parchment paper. Spread the quark filling over it. Tear or crumble the remaining dough into small pieces and scatter on top of the filling.

Bake in the preheated oven for 35–40 minutes. Whisk the yolk with cream and spread over the cake after baking. Bake an additional 15 minutes.

Remove from the oven, let cool, then cut into servings.
