Almond Cinnamon Sticks

Ingredients
- 150 g egg whites (3-4 eggs)
- 1 tsp orange juice
- 300 g powdered sugar
- 1 tsp vanilla sugar
- 0.5 orange (unprocessed)
- 300 g ground almonds
- 2 tsp Cinnamon
- ground almonds (for rolling out)
- powdered sugar (for rolling out)

Instructions

Preheat the oven to 140°C and line one or two baking trays with parchment paper.

Whisk the egg whites with orange juice until half-beaten, then add powdered sugar, vanilla sugar, grated orange zest, and squeezed orange juice. Continue whisking until the mixture is firm and glossy. Set aside 3-4 tablespoons for glazing and keep cool.

Add the ground almonds and cinnamon to the remaining foam mixture.

Dust your work surface with ground almonds and powdered sugar, roll the dough out to about ¾ cm thick into a rectangle. Cut small sticks (1 x 4 cm), place them on the tray, and chill for about 10 minutes.

Glaze the sticks with the reserved foam mixture (add orange juice dropwise if too thick), sprinkle with cinnamon, and bake gently for 20-30 minutes until pale yellow.
