Chai Buttermilk with Fruit and Hemp Seeds

Ingredients
- 2 bags black tea
- 0.5 tsp Peppercorns
- 4 cloves cloves
- 3 cardamom pods
- 3 star anise
- 4 small bananas (100 g each)
- 4 pears
- 10 g ginger
- 5 g turmeric
- 1 l buttermilk
- 0.5 tsp cinnamon
- 4 tbsp hemp seeds (15 g each, peeled and toasted)

Brew the black tea with 400 ml boiling water for 3–4 minutes, then remove the tea bags. Place peppercorns, cloves, cardamom, and star anise in a tea infuser or disposable bag, seal, and steep in the tea for about 4 hours. Strain the tea through a sieve and set aside.

Peel the bananas, slice two of them, and arrange on bowls. Wash the pears, quarter them, core, dice, and scatter over the banana slices.

Peel and finely grate ginger and turmeric (glove recommended). Blend the tea with buttermilk, remaining bananas, grated ginger, 1/2 tsp turmeric, and cinnamon until smooth. Pour the chai buttermilk over the fruit in the bowls and sprinkle with hemp seeds and the rest of the grated turmeric.
