- 400 g celery
- 1 apple
- juice of half a lemon
- 100 g yogurt
- 2 tbsp grape seed oil
- 4 oranges
- 40 g black olives (pitted)
- Salt
- ground pepper

Peel the celery and cut into small sticks or shave. Blanch in salted water for about 2 minutes, then shock in cold water and drain.

Thoroughly peel the oranges, removing the white membranes, and cut out the segments. Dice these. Squeeze the remaining fruit flesh and mix with lemon juice, yogurt, and grape seed oil. Combine the orange pieces and celery, distribute into glasses, and serve garnished with chopped olives.
