A fresh celery salad with apples and red onions featuring crisp vegetables and a tangy dressing, inspired by Spoonsparrow.
Ingredients
- 8 boiled potatoes (well cooled)
- 2 red onions
- 4 celery stalks (with greens)
- 1 sour apple (Boskoop)
- Salt
- black pepper, freshly ground
- 5 tbsp light mayonnaise (pre-made)
- 2 tbsp plain yogurt
- 2 tbsp lemon juice
- 4 tbsp chives rings
- 100 g Hazelnuts

Peel the potatoes and cut them into bite-sized pieces. Peel the onions and slice them into thin rings. Wash the celery stalks, trim the greens aside, and cut the stalks into 1 cm thick strips. Peel the apple, halve it, core it, and chop into pieces.

Combine all ingredients in a bowl and mix with mayonnaise, yogurt, lemon juice, and chives rings. Season with salt and pepper, then fold in hazelnuts. Garnish with chives and celery greens before serving.
