Celery Quiche with Shrimp

Ingredients
- 150 g shrimp
- 200 g celery stalks
- 1 stalk leek
- 1 EL Butter
- Salt
- pepper (ground)
- 300 g heavy cream
- 3 eggs
- 250 g flour
- 125 g cold butter
- 1 pinch salt
- 1 egg

Sift the flour onto a work surface, mix in salt and press a well into the center. Cut the cold butter into small pieces, distribute around the well, add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

Roll the dough thin between two sheets of cling film and line a greased quiche tin with it.

Halve the leek lengthwise, wash, and slice into fine strips.

Wash, peel, and slice celery stalks into thin rounds.

In a pan melt a little butter, sauté leek and celery, pour in 1/2 cup water and steam briefly. When the celery is firm, all liquid should be evaporated. Mix in shrimp, season with salt and pepper, taste, then spread over the prepared crust. Whisk cream with eggs, season with salt and pepper, pour over the filling. Bake in a preheated oven at 180°C on the lower rack for about 35 minutes until golden brown.
