Celery and Beet Salad

Ingredients

  • 250 g beetroot
  • 4 stalks celery
  • 1 orange peel
  • 3 oranges (segments)
  • Pepper (freshly ground)
  • 2 tbsp white wine vinegar
  • 5 tbsp best olive oil
  • 2 tbsp chives

Instructions

    Cook unpeeled beets in salted water for about 40 minutes, let cool, peel and slice into rounds.

    Peel oranges with a sharp knife, remove all white membranes and cut segments along the inner membranes.

    Cut celery into ~5 cm pieces and blanch for about 1 minute.

  4. 4.

    Whisk vinegar, salt, pepper and oil into a salad dressing, fold in grated orange zest and chives.

    Combine celery, orange segments and beet slices, stir in dressing, let rest briefly, then serve.
