Cauliflower with Barley

The cauliflower with barley from Spoonsparrow tastes great for vegans and is on the table in less than half an hour.

Ingredients

  • 1 medium cauliflower
  • 1 onion
  • 2 tbsp Rapeseed oil
  • 300 g pearl barley
  • 850 ml vegetable broth
  • 1 bunch Basil
  • Salt
  • freshly ground pepper

Instructions

    Wash the cauliflower and cut into mini florets. Peel, dice the onion and sauté in oil in a pot. Add cauliflower and barley. Pour in vegetable broth and bring to a boil once. Cover and simmer for about 15 minutes, stirring occasionally.

    Wash basil, shake dry and chop. Season barley with salt and pepper, fold in basil, and serve with a quick-fried or sunny-side-up egg on top.
