Sausage and Leek Skillet with Potatoes

Ingredients

  • 800 g potatoes (preferably waxy)
  • 1 stalk leek
  • 5 shallots
  • 2 large beef tomatoes
  • 3 Debrecziner sausages
  • 3 Vienna sausages
  • Salt
  • Pepper (freshly ground)
  • butter fat for frying

Instructions

    Cook the potatoes and peel them; let cool slightly, then slice into thick rounds.

    Clean the leek and cut it into rings; peel the shallots and halve or quarter them.

    Score the tomatoes crosswise, blanch in boiling water, peel, and quarter them.

    Cut the various sausages into small bite-sized pieces.

    Heat butter fat in a large skillet. First brown the potatoes until golden, then add the sausage pieces. Once they are lightly crisped, add the shallots, leeks, and tomato pieces. Cook for about 5 more minutes until the vegetables soften. Season the dish with salt and pepper.
