Ingredients

  • 30 g Butter
  • 1 spring onion (thinly sliced)
  • 30 g flour
  • 200 ml milk
  • 300 ml Vegetable broth
  • 150 g cream cheese
  • Salt
  • Pepper
  • 3 tbsp whipping cream
  • 1 egg yolk (for binding)
  • 1 large cauliflower

    Sauté the spring onion strips in butter. Add flour, stir, let it brown slightly, then gradually whisk in liquid until a thick, lump-free roux forms; once smooth, add remaining liquid all at once. Bring sauce to a boil, break in cream cheese pieces and dissolve. Bind with egg yolk by whisking yolk with some cream and sauce, then quickly fold into the hot but not boiling sauce.

    Wash cauliflower thoroughly, cut into florets, blanch in boiling salted water for 5 minutes, shock in ice water, drain and place in a baking dish. Pour cheese sauce evenly over, bake in preheated oven at 200°C for about 20 minutes until golden yellow.
