Cauliflower Flan

A creamy cauliflower flan made with fresh ingredients from the flower vegetable category.
Ingredients
- 500 g Cauliflower
- 2 tbsp butter
- Salt
- 50 ml Vegetable broth
- 4 tbsp crème fraîche
- white pepper
- nutmeg (ground)
- 1 bunch chives
- 3 egg whites
- oil (for the ramekins)
- garnish
- 1 Carrot
Instructions

Wash the cauliflower and cut into florets.

Cook the cauliflower in boiling salted water for about 10 minutes until tender.

Blend with vegetable broth and let cool.

Whisk the egg whites and crème fraîche, then fold into the cooled purée. Season with salt, pepper, and nutmeg.

Wash the chives (reserve some for garnish), slice into ribbons and fold into the cauliflower mixture.

Grease four ramekins and fill them with the mixture. Place the ramekins in a hot water bath and bake in a preheated oven at 160 °C on the middle rack for about 30 minutes, until set.

Grate the carrot into very thin strips, arrange around the flan, wrap with chives, and serve.
