Ingredients

  • 600 g chicory
  • 2 Tomatoes
  • Salt

Instructions

    Clean the chicory, cutting out the bitter core at the blunt end in a wedge shape with a sharp knife. Leave small and medium heads whole, halve very thick ones. Briefly blanch the tomatoes for a few seconds, shock them, peel, quarter, deseed, and dice.

    Heat about ½ l of water with a pinch of salt in a pot and simmer the chicory covered for 3–5 minutes. Remove, drain, and arrange on plates with the tomato cubes.
