Ingredients

  • 500 g zucchini
  • 2 tbsp oil
  • 50 g almond flour
  • 50 g Parmesan
  • 1 tsp paprika powder
  • 1 tbsp dried herbs
  • 150 g Greek yogurt
  • 1 tbsp White Wine Vinegar
  • 1 tsp Olive oil
  • a handful chives (≈5 g)
  • Salt
  • Pepper

Instructions

    Wash the zucchini and cut into finger‑thick sticks.

  2. 2.

    Combine the oil, almond flour, Parmesan, paprika powder, and herbs in a large bowl; toss the zucchini in the mixture.

    Spread the coated vegetables on a parchment‑lined baking sheet and bake in a preheated oven at 200 °C (fan 180 °C, gas 3) for 15–20 minutes until golden brown. Flip once after 10–12 minutes.

    Wash the chives, shake dry, and slice into thin ribbons. Mix the Greek yogurt with white wine vinegar, olive oil, and chives to make a dip; season with salt and pepper. Serve the finished low‑carb fries with the dip.
