Cat Tongues

Ingredients
- 4 eggs
- 100 g sugar
- 1 packet Bourbon vanilla sugar
- 100 g wheat flour
- 60 g starch (e.g., Mondamin)
- 2 tsp baking powder (scratched off)
- 250 g dark chocolate couverture
- 2 tbsp finely chopped pistachio seeds

Preheat the oven to 180°C fan.

Beat the eggs, sugar and vanilla sugar with an electric hand mixer on high speed for 1 minute until pale and creamy.

Sift together the flour, starch and baking powder and fold into the egg mixture using a low speed setting.

Fill a piping bag fitted with a round tip with the batter and pipe small spoon-shaped mounds (not too large, the dough will still rise) onto a parchment-lined baking sheet. Bake in the preheated oven for 10 minutes. Allow to cool completely.

Melt the chocolate couverture over a bain‑marie, then dip half of each biscuit into the melted chocolate, place on a cooling rack, sprinkle with pistachios and let set.
