Cashew Bethmanns

Ingredients

  • 1 egg
  • 125 g Cashews
  • 200 g marzipan dough
  • 1 tbsp flour
  • 50 g powdered sugar

Instructions

    Separate the egg. Finely chop half of the cashews with a stick blender.

  2. 2.

    Combine the chopped cashews with the marzipan dough, egg white, flour and powdered sugar into a smooth dough.

    Shape the mixture into cherry-sized balls and press them slightly flat.

  4. 4.

    Line a baking sheet with parchment paper. Beat the yolk with about 1 tsp water and brush the Bethmanns with it.

    Press the remaining cashews onto the Bethmanns. Bake in a preheated oven at 175 °C (fan 150 °C, gas: level 2) on the middle rack for about 15 minutes until golden brown.

    Let the Cashew Bethmanns cool on an oven rack.
