Ingredients
- 250 g rose hips
- 500 g carrots
- 50 g onions
- 10 g butter
- 100 ml Vegetable broth
- 0.5 EL liquid honey
- nutmeg
- Salt
- Pepper (freshly ground)
- 4 EL cream cheese
- 2 EL grated horseradish (fresh or jarred)
- 2 EL finely chopped parsley

Halve rose hips lengthwise, quarter large ones, remove seeds and hairs, and wash thoroughly.

Cut carrots lengthwise or into quarters, then slice crosswise into about 1.5 cm pieces. Peel onions, dice very finely, and sauté in hot butter until translucent.

Add rose hips and continue sautéing, then add carrots, pour in vegetable broth and lemon juice. Cover and simmer for about 8 minutes until the rose hips and carrots are tender; season with honey, nutmeg, salt, and pepper.
