Carrot Spelt Porridge with Almonds

A fine almond‑infused porridge that delivers the necessary protein and minerals for this vegetarian dish.

Ingredients

  • 100 g carrots (1 carrot)
  • 20 g peeled almond kernels
  • 100 ml carrot juice
  • 20 g spelt whole‑grain semolina (2 tbsp)

Instructions

    Peel, wash, and roughly chop the carrot. Place it with the almonds in a food processor and pulse until finely chopped.

    Transfer the carrot and almond mixture to a small pot. Add the carrot juice and bring everything to a boil.

    Stir in the semolina and simmer over low heat for about 5 minutes, then let it thicken for a few more minutes. If needed, add a little water. Finally, blend everything finely with an immersion blender.
