Carrot Soup with Ginger and Lime

Ingredients

  • 1 onion
  • 500 g carrots
  • 1 tbsp freshly grated ginger
  • 1 tbsp butter
  • 2 tsp sugar
  • 1 l vegetable broth
  • 250 g sour cream
  • Salt
  • Pepper (freshly ground)
  • 1 lime (juiced)
  • coriander leaves
  • lime zest

Instructions

    Peel and dice the onion. Peel the carrots and slice them.

    Sauté the onion in hot butter in a pot until translucent, then add the carrots, ginger, and sugar and cook briefly. Pour in the vegetable broth and simmer for about 15 minutes, then let cool.

    Puree the soup finely and strain through a sieve. Stir in the sour cream and season with salt, pepper, and lime juice. Refrigerate to chill.

    Serve garnished with coriander leaves and lime zest.
