Ingredients
- 1 whole carp (ca. 1 kg, gutted, scaled, headless)
- 1 tbsp Lemon Juice
- Salt
- 4 tbsp clarified butter
- 60 g Butter
- 80 g almond slivers
- 2 tsp Honey

Wash the carp inside and out and cut into four pieces with a sharp knife. Drizzle the belly cavity with lemon juice and season with salt. Heat the clarified butter in a non-stick pan and sear the carp pieces on both sides for 3-4 minutes each, then remove.

Heat the butter in another pan, add the almond slivers and toast for 1-2 minutes until golden brown, stir in honey, place the carp fillets, turn off the heat and let rest covered for 5 minutes.
