- 600 g chicken breast fillet (ready to cook, skinless)
- Salt
- black pepper (freshly ground)
- flour (for dredging)
- 150 ml pineapple juice
- 150 g coconut flakes
- 30 g clarified butter

Wash the meat, pat dry and cut into large pieces. Season with salt and pepper, then coat first in flour, next in pineapple juice, and finally in coconut flakes.

Press the coating firmly onto each piece and fry the chicken parts in hot clarified butter until golden brown all around. Arrange on a plate for serving.
