Ingredients
- 8 small tomatoes
- 2 Garlic cloves
- 2 tbsp olive oil
- Salt
- Pepper
- powdered sugar (for dusting)
- 350 g halloumi
- 2 tbsp lemon juice
- 2 handfuls wild arugula

Preheat the oven to 180°C fan.

Wash the tomatoes, cut off the stem ends and halve them. Place them cut side up on a baking tray lined with parchment paper. Peel and finely chop the garlic. Mix with olive oil and drizzle over the tomatoes. Season with salt and pepper, dust lightly with powdered sugar, then bake in the oven for about 20 minutes to caramelize.

Cube the halloumi and fry in a hot non-stick pan without oil for 3-4 minutes until golden brown.

Remove from heat, drizzle with lemon juice and season with a little salt and pepper.

Rinse the arugula, dry thoroughly by spinning it in a salad spinner or patting dry.

Arrange the tomatoes on plates and scatter the cheese over them. Serve garnished with arugula.
