Tofu Balls with Vegetables

Ingredients
- 1 onion
- 1 Garlic clove
- 400 g tofu (medium firm)
- 2 tbsp Soy flour
- 1 untreated lemon (juice and zest)
- 2 tbsp nutritional yeast
- 2 tbsp freshly chopped herbs (thyme and oregano)
- Salt
- Pepper
- 50 g breadcrumbs
- 2 tbsp Vegetable oil
- 500 g sugarcane lettuce
- 1 tbsp Vegetable oil
- Salt
- Pepper
- 100 ml Vegetable broth
- 4 tbsp soy cream

Peel and finely chop the onion and garlic. Crumble or mash the tofu and combine with the onion and garlic in a bowl. Stir in the soy flour with lemon juice and add the zest to the tofu mixture. Add the nutritional yeast and herbs, seasoning with salt and pepper. Mix well and incorporate enough breadcrumbs or water until the mixture is easily formable. Shape into small balls.

Wash, clean, cut off the stem of the sugarcane lettuce and slice into strips. Briefly sauté in hot oil, season with salt and pepper, then pour in the broth. Stir in the soy cream and simmer gently for about 10 minutes.

Brown the balls in hot oil in a non-stick pan for about 5 minutes on all sides until golden brown. Serve with the lettuce.
