Caprese Wraps with Avocado

Ingredients

  • 2 Eggs (size M)
  • 1 Avocado
  • 2 large tomatoes
  • 2 Mozzarella balls
  • 4 whole wheat tortillas
  • Salt
  • Pepper

Instructions

  1. 1.

    Poke the eggs, place them in boiling water and cook for approx. 8 minutes. Drain the eggs, cool them down under cold water and slice them.

    While the eggs are cooking, halve the avocado, remove the pit and dice the flesh. Wash the tomatoes and slice them thinly. Slice the mozzarella balls thinly. Cut the tortillas in half on one side up to the middle.

    Spread a quarter of the tortillas with avocado and mash it with a fork. Top the other quarters with mozzarella, egg and tomato. Season with salt and pepper as desired and then fold the quarters together one after the other.

    Toast the tortillas in a pan without fat for approx. 1 to 2 minutes on each side. Turn them occasionally until the mozzarella starts to melt. If you are using a contact grill, fold it together, close it and let the wrap grill for approx. 5 minutes.
