Caprese Tart

Ingredients
- 200 g Flour
- 100 g cold butter (in pieces)
- 50 g sour cream
- 1 egg
- Salt
- 1 Garlic clove
- 1 bunch Basil
- 100 ml milk
- 3 tbsp olive oil
- 200 ml whipping cream
- 4 eggs
- Pepper (from the grinder)
- 4 tomatoes
- 2 balls mozzarella (125 g each)
Instructions

Preheat oven to 200°C with upper and lower heat.

Knead flour, butter, sour cream, egg, and salt into a smooth dough. Wrap in foil and chill for 30 minutes.

Blend peeled garlic with drained basil leaves, milk, and 2 tbsp oil. Add cream and eggs, season with salt and pepper. Wash and trim tomatoes, cut into 1 cm thick slices. Drain mozzarella and slice.

Roll out dough. Grease tart pan with remaining oil and line with dough. Prick dough base several times with a fork. Spread egg custard over it and layer tomatoes and mozzarella in a tiled pattern. Bake in preheated oven for about 30 minutes.

Garnish with basil leaves.
