Three Different Melon Sorbets

Ingredients

  • 400 g cantaloupe melon flesh
  • 70 g purified sugar (sugar syrup, 1:1)
  • 40 g dextrose (glucose)
  • 2 tbsp lemon juice
  • 30 ml watermelon liqueur

Instructions

    Dice and puree the watermelon flesh. Blend finely with purified sugar, dextrose, lemon juice, and liqueur in a blender. Chill in the refrigerator at 5-7°C. Then freeze in an ice cream maker according to manufacturer instructions (about 40 minutes).

    Do the same for honey melon sorbet and cantaloupe sorbet, omitting the liqueur.

    For serving, scoop balls and arrange in glasses as desired.
