Caprese Pasta with Arugula

Ingredients

  • 1 bundle arugula
  • 2 cloves garlic
  • Salt
  • 4 ripe tomatoes
  • 200 g mozzarella
  • 400 g spaghetti
  • 5 tbsp toasted pine nuts
  • black pepper (ground)
  • extra virgin olive oil

Instructions

    Wash the arugula leaves and dry them. Peel the garlic and crush it with a pinch of salt in a mortar to make a paste. Wash the tomatoes, halve them, remove seeds and cut into small pieces. Drain the mozzarella and dice.

    Cook the spaghetti in plenty of salted water until al dente and drain. Reserve some cooking water. Toss the hot pasta immediately with 3 tbsp olive oil, the garlic paste, and generous coarse pepper. Add 1-2 tbsp reserved pasta water if needed. Fold in the tomato pieces, pine nuts, and arugula leaves, then plate the spaghetti. Sprinkle mozzarella cubes on top and serve right away.
