Candied Lemons and Oranges

Ingredients
- 2 untreated oranges
- 2 untreated lemons
- 500 g sugar
Instructions

Wash the oranges hot, trim the ends, slice into rounds. Place in a pot, cover with cold water, bring to a boil once. Remove the slices with a slotted spoon and stir 0.5 l cooking liquid with the sugar. Simmer for 10 minutes until the syrup draws threads. Then let cool.

Place the fruit on a sieve and set in a heat‑proof vessel. Pour the syrup over them and let steep for 24 hours.

Drain the syrup and reboil it, then pour the cooled syrup over the slices again. Let steep another 24 hours.

Repeat the procedure two more times.

Remove the fruit slices from the syrup and drain on a wire rack (under a baking sheet) to dry.
