Ingredients
- 4 whole wheat tortillas
- 2 carrots
- 1 yellow bell pepper
- 1 small red onion
- 120 g Grana Padano (32% fat content)
- 1 Avocado
- 4 Sun-dried Tomatoes
- 50 g spinach leaves
- 0.5 bunch Parsley
- salt (from the mill)
- pepper (from the mill)
- 8 tbsp hummus (chickpea dip)
Instructions

Peel carrots, peel and cut into very thin strips. Halve bell pepper, remove core, wash flesh and cut into strips. Peel onion, halve and cut into thin strips. Grate Grana Padano coarsely. Cut tomatoes into strips. Halve avocado, remove pit and slice the flesh.

Warm tortillas in a non-stick pan over low heat for about 1 minute each.

Spread 2 tbsp hummus on each tortilla, leaving the edges free. Fill the tortillas with vegetables, salad and cheese, then season with salt and pepper. Fold in the edges and roll up the wraps.
