Ingredients
- 150 g softened butter
- 150 g brown sugar
- 4 eggs
- 200 g Flour
- 50 g ground hazelnuts
- 50 g dried raspberries
- 0.5 tsp Baking powder
- 80 ml milk
- 80 g softened butter
- 125 g powdered sugar
- 250 g chocolate cream cheese
- 400 g milk couverture chocolate
- 4 tbsp whipping cream
- 1 tbsp Vegetable oil
- small sugar pearls (pink and white)
- pink sugar flower
Instructions
-
1.
Preheat the oven to 180°C (350°F).
-
2.
Cream the butter with the brown sugar, then add the eggs one at a time. Mix the flour with hazelnuts, raspberries, and baking powder; alternate adding this dry mix and milk into the butter‑egg mixture until a thick dough forms.
-
3.
Pour the batter into a parchment‑lined springform pan and bake for about 50 minutes, checking doneness with a skewer test.
-
4.
Remove the cake from the oven, let it cool completely, then release it from the pan and crumble into a bowl.
-
5.
For the filling, beat softened butter with powdered sugar until light and fluffy; gradually fold in cream cheese. Combine this frosting with the cake crumbs and shape small balls. Thread each onto lollipop sticks and chill for about an hour.
-
6.
Melt the milk couverture chocolate over a gentle steam bath; whisk in whipping cream and vegetable oil. Dip the chilled lollipops into the melted chocolate, coating them completely. Let excess drip off, then roll in sugar pearls. Garnish with pink sugar flowers if desired, and allow to set before serving.
