Ingredients
- 2 small chickens (≈800 g each)
- 2 cloves garlic
- 2 tbsp lemon juice
- 1 tsp chili powder
- 0.5 tsp cumin (ground)
- 1 tbsp paprika (sweet)
- 1 tsp dried thyme
- 4 tbsp olive oil
- Sea salt

Rinse the chickens, pat dry and cut them in half lengthwise. Peel and finely chop the garlic. Mix with lemon juice, chili, cumin, paprika, thyme, and olive oil; rub this mixture all over the chicken halves. Cover and refrigerate for about 2 hours.

Preheat the oven to 180°C (350°F) fan‑fry setting.

Remove the chickens from the marination and place them on a rack (fat pan underneath) with the skin side up in the oven for about 35 minutes. Midway, season the remaining marinade with salt and brush it over the chicken skin. Take out of the oven and serve immediately.
