Cabbage Soup with Bacon

Ingredients
- 200 g dried beans (red and white)
- 500 g white cabbage
- 250 g waxy potatoes
- 2 cloves garlic
- 2 tbsp butter
- 800 ml vegetable broth
- Salt
- ground pepper
- nutmeg
- 100 g bacon cubes
- 1 tbsp freshly chopped parsley

Soak the beans overnight. Wash, trim the core of the cabbage and cut the leaves into pieces. Peel and cube the potatoes. Peel and finely chop the garlic, then sauté with the cabbage in hot butter. Deglaze with broth.

Add the potatoes and soaked beans, season with salt, pepper, and nutmeg, and simmer for about 45 minutes while stirring occasionally. Add the bacon cubes and cook for another 5 minutes. Finish by adding parsley, taste, and serve.
