Ingredients

  • 1 kg cabbage (1 head of cabbage)
  • Salt
  • 2 bell pepper caps
  • 1 bunch parsley
  • 5 tbsp white wine vinegar
  • black pepper (freshly ground)
  • 5 tbsp sunflower oil

Instructions

    Discard outer wilted leaves of the cabbage. Quarter the head, remove the core from each quarter. Grate the quarters into strips using a vegetable shredder. Place in a salad bowl, season with salt and massage by hand to tenderize while keeping crunch.

    Wash bell pepper caps and slice into thin strips. Wash parsley and finely chop. Mix both into the cabbage.

    Whisk vinegar and pepper together, then whisk in oil. Pour over the salad, mix well, and let it rest. Taste and adjust seasoning. This pairs nicely with, for example, meatballs.
