Cabbage Salad with Apple

Ingredients

  • 4 eggs
  • 1 apple
  • 600 g red cabbage (0.5 head)
  • 100 g Arugula
  • 3 tbsp Walnut Oil
  • 2 tbsp Apple cider vinegar
  • 1 tsp Mustard
  • Salt
  • Pepper
  • 30 g hazelnuts (2 tbsp)
  • 1 small bunch of watercress

Instructions

    Hard boil the eggs in boiling water for 7–10 minutes. Then cool them under cold running water.

    While the eggs are cooking, wash and quarter the apple, remove seeds, and cut into pieces. Clean and finely grate the cabbage. Wash the arugula, dry it, and chop it small.

    For the dressing, whisk together the walnut oil, apple cider vinegar, mustard, salt, and pepper. Toss the grated cabbage, apple pieces, and arugula with the dressing.

    Peel the eggs and cut them into quarters. Roughly chop the hazelnuts. Sprinkle the watercress over the salad along with the nuts. Top the cabbage salad with the egg quarters.
