Cabbage Rolls with Ground Beef
The cabbage rolls with ground beef from Spoonsparrow are rich in fiber and protein: the perfect dinner!
Ingredients
- 1 old-fashioned roll
- 4 large savoy cabbage leaves
- Salt
- 1 onion
- 1 tbsp vegetable oil (10 ml)
- 500 g ground beef
- 1 egg
- 1 tsp medium-hot mustard
- 1 tsp thyme
- 350 ml vegetable broth

Soak the roll in lukewarm water. Trim, wash and blanch the cabbage leaves in boiling salted water for 2 minutes. Remove, shock with cold water and pat dry. Lay the leaves side by side and cut out the tough stem. Peel and finely dice the onion; sauté in a pan over medium heat with oil until translucent.

Remove from heat and let cool. Mix the ground beef with the drained roll, egg, onion, mustard and thyme. Season with salt and pepper.

Spoon 2 tbsp of the filling onto each cabbage leaf, fold the opposite sides about 1 cm toward the center, and roll into roulades. Tie with kitchen twine and place in a baking dish.

Preheat oven to 180°C (fan 160°C; gas: level 2-3). Pour broth over the rolls and bake for 30‑40 minutes. Remove, untie the twine and serve the cabbage rolls warm.
