Ingredients

  • 400 g penne
  • 500 g white cabbage (cleaned)
  • 500 g tomatoes
  • 1 onion
  • 2 tbsp olive oil
  • 200 ml vegetable broth
  • Salt
  • pepper (ground)
  • chopped chives for garnish

Instructions

    Coarsely chop the cabbage and simmer in boiling vegetable broth, covered, for about 10 minutes until tender.

    Heat tomatoes briefly, cool, peel, quarter, remove seeds, and dice.

    Cook pasta in salted water to al dente.

    Peel and finely chop onion. Sauté in hot oil, add tomatoes, then add cabbage with broth (let it reduce slightly if desired). Season with salt and pepper, mix in drained pasta, and serve on plates topped with chopped chives.
