Cabbage Flammkuchen
Cabbage flammkuchen: A snack, ideal as a light dinner for guests. The flammkuchen with cabbage stands out thanks to its crisp thin whole‑grain dough.
Ingredients
- 200 g cabbage (1 piece)
- 1 onion
- 5 tbsp olive oil
- Salt
- Pepper
- 0.5 tsp caraway seeds
- 70 g smoked turkey breast (sliced)
- 80 g grapes (red and green)
- 400 g whole‑grain wheat flour
- 200 g low‑fat quark

Clean, wash the cabbage, place it in a sieve and let it drain well. Slice the cabbage into thin strips, removing the thick leaf edges.

Peel the onion, halve it, and slice it into thin strips.

Heat 1 tbsp oil in a non‑stick pan. Steam the cabbage and onion strips for 3–5 minutes over medium heat. Season with salt, pepper, and caraway seeds. Set aside.

Slice the turkey breast into wide strips. Wash the grapes, drain them well, then halve them.

In a bowl combine the flour, remaining oil (4 tbsp), 250 ml water, and 0.5 tsp salt; knead with hand mixer attachments until smooth.

Roll out the dough on parchment paper to match the baking sheet size. Transfer it to the sheet.

Spread quark over the dough. Arrange cabbage on top. Top with turkey strips and grapes. Bake in a preheated oven at 225 °C (fan: 200 °C, gas: level 3‑4) on the lowest rack for about 12 minutes. Remove, lift the parchment from the sheet, and cut into eight portions.
