Cabbage and Pearl Barley Stew with Minced Meat

Ingredients
- 100 g Onions (2 onions)
- 2 cloves garlic
- 1 kg cabbage (1 head)
- 3 tbsp Rapeseed oil
- 600 g beef mince
- 350 g pearl barley
- 2 l tomato juice
- 200 ml classic vegetable broth
- Salt
- Pepper
- 1 bunch Basil
- 1 bunch parsley
- 150 ml cooking cream (10% fat)
Instructions

Peel and finely dice the onions and garlic.

Wash the cabbage, quarter it, remove the core and cut the cabbage into strips.

Heat the oil in a large pot and brown the minced meat over medium heat. Add the onions and garlic and brown for 1-2 minutes.

Add the cabbage, pearl barley, tomato juice and vegetable broth. Season with salt and pepper and simmer covered over low heat for 25-30 minutes.

Meanwhile, wash, dry and pluck the basil and parsley leaves. Set a few aside and put the rest in a tall container. Pour in the cooking cream and puree everything finely with an immersion blender.

Stir the herb cream into the cabbage stew with minced meat. Season the cabbage and minced meat stew with salt and pepper again. Garnish with herb leaves and serve.
