Burger Bowl with Avocado Fries and Cocktail Sauce

Ingredients

  • 1 piece Parmesan (20 g; 32% fat in dry matter)
  • 4 tbsp Whole wheat breadcrumbs (40 g)
  • 2 tbsp Black sesame seeds (30 g)
  • Salt
  • Pepper
  • 2 Avocados
  • 1 egg
  • 300 g Ground Beef
  • paprika powder
  • 2 tbsp Rapeseed oil
  • 1 Lettuce head
  • 8 Cherry tomatoes
  • 1 small red onion
  • 0.25 bunch Chives (5 g)
  • 200 g yogurt (3.5% fat)
  • 1 tbsp tomato paste (20 g)

Instructions

    Grate the Parmesan finely and mix with breadcrumbs and sesame seeds, then season with salt and pepper. Whisk the egg.

    Halve the avocados, remove the pit, scoop out the flesh, and slice into strips. Dip the avocado first in the egg, then in the Parmesan-sesame mixture. Bake the avocado fries in a preheated oven at 180 °C (160 °C convection; Gas: level 2–3) for about 20 minutes.

    In the meantime, season the ground beef generously with salt, pepper, and paprika powder and form into 8 small burger patties. Heat the rapeseed oil in a large pan and brown the burger patties from each side over medium-high heat for 3-4 minutes. Remove from the pan and set aside.

    Wash, dry, and tear the lettuce into bite-sized pieces. Wash and halve the tomatoes. Peel the onion and slice into thin rings. Divide the vegetables into four bowls. Arrange 2 burger patties and a quarter of the avocado fries on the bowls.

    For the cocktail sauce, wash, shake dry, and slice the chives into rings. Mix with yogurt and tomato paste and season with salt and pepper. Serve the cocktail sauce with the burger bowl and avocado fries.
