  • 0.5 tsp cayenne pepper
  • 720 g cod fillets (4 cod fillets)
  • 4 tbsp spelt flour Type 1050
  • 2 tbsp olive oil
  • 4 sprigs coriander
  • 3 sprigs dill
  • 1 Lime

Instructions

  1. 1.

Peel and finely dice the onions.

  2. 2.

Halve, deseed, wash, and dice the bell peppers.

  3. 3.

Heat rapeseed oil in a pan and sauté the onions and peppers for 3-4 minutes. Season with salt, pepper, cumin, and cayenne pepper. Keep the vegetables warm.

  4. 4.

Rinse the cod fillets and pat them dry with kitchen paper. Season with salt and pepper.

  5. 5.

Place flour on a flat plate. Dredge the cod fillets in the flour and then lightly shake off any excess.

  7. 7.

Meanwhile, wash the coriander and dill. Shake them dry, pluck the leaves or dill tips, and roughly chop them. Add to the bell pepper mixture.

  8. 8.

Halve the lime and squeeze one half. Slice the remaining lime into wedges. Arrange the cod fillets with the vegetables on warmed plates. Drizzle with lime juice, garnish with lime wedges, and serve the pan-fried cod fillets immediately.
