Slice the tofu into 4 pieces. Whisk the egg and coat each tofu slice in it. Then dredge them in bread crumbs, pressing lightly to adhere. 2.
Wash the lettuce leaves, shake dry, and remove any central vein if desired. Halve the burger buns; spread ketchup on the bottoms and mayo on the tops. Season both lightly with salt and pepper. Layer lettuce on the bottoms, place one tofu slice on each, top with a tomato slice. Distribute alfalfa sprouts over the tomatoes and close with the bun tops. Peel the carrots and cut into sticks. Place one burger with some carrot sticks in a lunchbox and serve.
