Tofu Burger with Hummus

Ingredients

  • 1 onion
  • 20 g Parsley (1 bunch)
  • 40 g parmesan cheese (1 piece)
  • 300 g Tofu
  • 2 tbsp Soy sauce
  • 1 egg
  • 30 g sesame seeds (2 tbsp)
  • 20 g whole wheat breadcrumbs (2 tbsp)
  • Salt
  • Pepper
  • 1 tbsp Rapeseed Oil
  • 1 tbsp White Wine Vinegar
  • 0.5 tsp mustard
  • 1 tbsp Olive Oil
  • 1 tbsp walnut oil
  • 1 tomato
  • 40 g mixed salad (e.g., arugula, romaine, frisée; 0.5 bunch)
  • 4 toast buns
  • 80 g hummus (jar; 4 tbsp)

Instructions

    Peel the onion and dice finely. Wash the parsley, shake dry and chop finely. Grate the parmesan cheese.

    Mash the tofu with a fork and mix in the onion, parsley, parmesan, soy sauce, egg, sesame seeds and breadcrumbs. Season with salt and pepper. Shape the mixture into 4 thin patties.

    Heat rapeseed oil in a pan. Fry the tofu patties over medium heat for about 3 minutes on each side.

    Meanwhile combine vinegar, mustard and the remaining oils and season with salt and pepper. Wash the tomato, halve it, cut off the stem end, slice into rounds. Wash the salad and spin dry.

    Halve the buns and toast them. Spread the lower half with salad, tomato and dressing. Place the tofu patties on top, spread hummus over them and place the upper bun halves on top.
