Ingredients
- 250 g Salmon fillet
- 2 tbsp lemon juice
- Salt
- Pepper
- 1 tsp Ras el-Hanout (Arabic spice blend)
- 2 oranges
- 3 sprigs parsley
- 3 sprigs cilantro
- 2 sprigs Mint
- 250 g bulgur
- 5 tbsp olive oil
- 60 g pistachio nuts (4 tbsp)
Instructions

Rinse salmon under cold water, pat dry, drizzle with lemon juice and season with salt, pepper, and Ras el-Hanout.

Filet the oranges, squeeze out any remaining fruit pulp and collect the juice.

Wash herbs, shake off excess water, and roughly chop them.

Cook bulgur according to package instructions.

Meanwhile, heat 2 tbsp oil in a pan. Sear salmon fillet on both sides over high heat until browned. Reduce heat and let fish steam for about 10 minutes until translucent.

Slice salmon into rounds and fold with orange segments, herbs, pistachios, 3 tbsp orange juice, and remaining oil into the bulgur.
