Bulgur Salad with Tomatoes

Ingredients

  • 250 g bulgur (hard wheat groats)
  • Salt
  • 480 g tomatoes (6 tomatoes)
  • 1 large vegetable onion
  • 0.5 bunch spring onions
  • 1 bunch flat-leaf parsley
  • 0.5 lemon
  • 4 tbsp olive oil
  • 1 tbsp Tomato Paste
  • Pepper

Instructions

    Cook the bulgur according to package instructions in salted water.

    Meanwhile blanch the tomatoes, peel, core and cut the flesh into cubes.

  3. 3.

    Peel the onion and finely dice it. Wash and trim the spring onions; slice one-third into long strips and dice the rest small.

    Wash the parsley, shake off excess moisture and chop it. Squeeze half a lemon for juice.

  5. 5.

    Heat oil in a pan. Sauté the onion and diced spring onions over medium heat for 2 minutes. Stir in tomato paste and lemon juice. Add the tomato cubes and mix everything with the bulgur.

    Season the bulgur with salt and pepper, divide into four bowls and garnish with parsley and remaining spring onions.
