Bulgur Salad

A perfect post-work recipe – quick to make, healthy and with fresh ingredients.
Ingredients
- 250 g bulgur
- 500 ml vegetable broth
- 100 g raisins
- 1 cucumber
- 4 tomatoes
- 2 onions
- 5 radishes
- 100 g almond kernels
- 50 g Pine nuts
- 2 tbsp freshly chopped parsley
- 1 tbsp freshly chopped coriander leaves
- 6 tbsp Olive oil
- 3 tbsp French walnut vinegar (or apple cider vinegar)
- Lemon juice
- Salt
- ground pepper
Instructions

Cover bulgur in a bowl with boiling broth and let it soak for about 30 minutes. Fluff the bulgur with a fork. Soak raisins in warm water for a few minutes. Peel cucumber, cut lengthwise in half, remove seeds, and dice into small cubes.

Wash tomatoes, blanch them briefly, cool, peel, quarter, seed, and dice into small cubes. Peel onions and finely chop. Wash radishes and slice thinly. Roughly chop almonds and pine nuts.

Place the bulgur in a large bowl and mix with cucumber, tomatoes, raisins, radishes, onions, herbs, and nuts.

Whisk olive oil, vinegar, salt, and pepper together and fold into the salad. Season with lemon juice, salt, and pepper before serving.
