Ingredients

  • 1 small Brussels sprout head
  • 3 tbsp olive oil
  • 150 ml instant chicken broth
  • salt, pepper from the mill
  • 2 chicken breast fillets (250g each)
  • 100 g crème fraîche
  • a few dashes lemon juice
  • 1 bunch chives

Instructions

    Clean and roughly chop the Brussels sprouts. Heat 2 tablespoons of olive oil. Briefly sauté the sprouts. Add the broth and cover; simmer for about 15 minutes. Season with salt and pepper.

    Season the chicken breast fillets with salt and pepper. Heat the remaining olive oil. Cook the fillets for 15 minutes, turning occasionally.

    Stir crème fraîche into the Brussels sprouts and season with salt, pepper, and lemon juice. Rinse the chives, pat dry, and cut into fine ribbons. Mix them into the sprouts. Slice the chicken breast and arrange on top of the sprouts.
