Bruschetta with Anchovy Paste

The Bruschetta with anchovy paste from Spoonsparrow is a tasty starter that always receives great feedback from guests!

Ingredients

  • 200 g salted anchovies (or 30 anchovy fillets in oil)
  • 300 ml milk (3.5% fat)
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Pepper
  • 8 slices whole‑grain baguette

Instructions

    Rinse the salted anchovies under running water and remove any bones. Place them in half of the milk for 15 minutes, then replace with fresh milk. After another 15 minutes, remove the anchovies and let them drain.

    Peel and finely chop the garlic. Finely chop the anchovies (or drained fillets) and mix with garlic, olive oil, vinegar, and pepper.

    Toast the baguette slices and spread the anchovy paste on top.
